Brewing cider is the process of combining a source of sugars with yeast. Once combined, the yeast eats the provided sugars, producing alcohol and carbon dioxide (CO2). This process is called fermentation.

  1. Using the sanitized measuring cup, pour 4 cups of water into your clean 3-quart or larger pot.
  2. Bring water to a boil, then remove from heat. Pour the contents of the bottles of concentrate in and stir until thoroughly mixed. This mixture is called must.
  3. Fill keg with cold tap water to the 4-quart mark on the back.
  4. Pour the must into the keg, then bring the volume of the keg to the 8.5-quart mark by adding more cold water. Stir vigorously with the spoon or whisk.
  5. Sprinkle the yeast packet into the keg, and screw on the lid. Do not stir.
  6. Put your keg in a location with a consistent temperature between 59°and 75° F (15°-24° C) and out of direct sunlight. Ferment for 7-14 days.

After approximately 24 hours, you will be able to see the fermentation process happening by shining a flashlight into the keg. You'll see the yeast in action in the must. The liquid will be opaque and milky, you will see rising bubbles in the liquid, and there will be bubbles on the surface.

Your fermentation will usually reach its peak in 2 to 5 days (this is also known as “high krausen”). You may see a layer of foam on top of the must, and sediment will accumulate at the bottom of the fermenter. This is totally normal. Complete fermentation will take approximately 1-2 weeks.

After high krausen the foam and activity will subside and your batch will appear to be dormant. Your cider is still fermenting. The yeast is still at work slowly finishing the fermentation process.

Rated 5 out of 5 by from Best Cider i have made yet!!! My kit was only two bottles, so I bought two kits, and used 3 bottles, it called for only 1/2 cup of sugar, i used 1 cup. dissolved sugar with 1 quart of water and 1/2lb of fresh diced ginger(used additive net from local homebrew store) and boiled for 20min, 14 days later 6%ABV, bottled in 22oz with 1/2tsp of sugar per bottle for priming, next batch I/m going to reduce that to 1/4tsp, a couple of bottles were under a lot of pressure. good luck!!! I'm making another batch tonight.

Rated 4 out of 5 by from hard apple cider I tried this before and didn't like the taste. It was too weak. You supplied three 3 bottles this time and it's a 100% better.

Rated 2 out of 5 by from Probably My Fault I brewed some of this for my wife because she likes Angry Orchard et al...it was bad. I figure I must have done something wrong, don't know what though. We put a little sugar in the glass which made it a little more drinkable but it's still bad. I think I will just stick to brewing beer.

Rated 4 out of 5 by from Follow the two-two-two for maximum fizz Finally found the secret the secret to making the cider fizz like champagne....Just let it condition longer, at least two weeks. Result is a dry cider that has much fizz and maximum bubbles.

Rated 4 out of 5 by from Don't trust the sediment! I got this a couple years ago and decided to do it again. I trusted the sediment at the bottom of the LBK as a guide to when it was done. Pulled it out way too early, there was so much sugar left when I did carbonation and added sugar, there was so much carbonation I would either have to let it explode off, or slowly ease the CO2 out. Definitely let this one sit for at least 2 weeks. Other than that, it was really good. I would recommend only adding half the sugar to the wort that the instructions say. The tartness was just right.

Rated 4 out of 5 by from Easy to Make-Good Result I'm not a huge fan of hard cider, but it's good occasionally so I tried it. The result was good, good as any commercial cider I've had. Not too sweet and just tart enough, quite effervescent. I used the three bottle kit and was happy with it. Pretty easy to make, too.

Rated 5 out of 5 by from Apple Cider Came out really good will be making more and getting more refills. Taste is more like a apple wine then cider I thought but was very good and had just the right amount of carbonation to it. I give it 5 Stars.
