    You’ll be ready to enjoy your first Oktoberfest brew in about 4–5 weeks — from brew day to tasting. Brew for 3 weeks, carbonate in bottles for 2 weeks, then chill, pour, and raise a glass!

    Brewmaster’s Tip:
    Want a smoother, more refined lager? Let your bottled beer “condition” for a few extra weeks in a cool, dark space. While totally optional, this added time allows flavors to mellow and mature — just like traditional Märzens. Start tasting after 2 weeks, and stash a few bottles to see the difference time makes.

    Oktoberfest Complete Kit Brewing Instructions

    STEP 1: SANITIZING

    Clean gear makes great beer. Sanitize your fermenter, mixing utensils, bottles, and anything else that will come in contact with your ingredients. Use the No-Rinse Cleanser and follow the sanitizing instructions included with your Mr. Beer Kit.

    REMEMBER: If it touches your beer, sanitize it first.

    STEP 2: BREWING

    Brewing is simply making wort (unfermented beer) and adding yeast to start fermentation.

    1. Remove the yeast packet from under the lid of the Oktoberfest Extract can. Set it aside — you’ll need it soon.
    2. Place the unopened can in a bowl of hot tap water for 10–15 minutes to soften the contents.
      This makes the thick malt extract easier to pour and helps you get every last drop.
    3. In a clean 3-quart or larger pot, bring 4 cups of water to a boil. Once boiling, remove from heat.
    4. Open the can and carefully stir the contents into the hot water until fully dissolved. You’ve just made wort!
    5. Fill your sanitized fermenter with cold water to the 4-quart mark (as shown on the back of the keg).
    6. Pour the wort into the fermenter, then add more cold water until you reach the 8.5-quart mark. Stir vigorously to mix and aerate the wort.
    7. Sprinkle the packet of brewing yeast across the surface of the wort. Do not stir.
    8. Screw on the lid tightly. Place the fermenter in a dark, quiet location that stays between 68°F and 76°F (20–24°C). Let it ferment for 3 weeks.
    9. After a few days, you may see bubbles, foam, or cloudiness — all signs of fermentation. Don’t open the keg. Trust the process!

    STEP 3: BOTTLING & CONDITIONING

    After 3 weeks, it's time to bottle your beer.

    Use the spigot on your fermenter to draw a small sample into a clean glass. If it tastes like flat beer (not sweet), it’s ready. If it still tastes sweet, wait another 2–3 days and try again. Don’t exceed 24 days in the fermenter.

    Sanitize Your Bottles

    1. Fill a 1-gallon container (or large bowl) with warm water and mix in the remaining half-packet of No-Rinse Cleanser until dissolved.
    2. Pour a small amount of the solution into each bottle, cap, and shake well. Let them sit for 10 minutes, shake again, and pour out the solution. No need to rinse.

    Prime for Carbonation

    1. Add 2 carbonation drops to each 740mL bottle.
      Alternatively, use 2 teaspoons of white sugar per 1-liter bottle.

    Fill & Seal

    1. Fill each bottle to about 2 inches from the top using the fermenter’s spigot.
    2. Cap the bottles tightly and turn each one upside down briefly to check for leaks. Do not shake.

    Store for Carbonation

    1. Store bottles upright in a dark, warm location (70–76°F) for 2 weeks to carbonate.
    2. After 2 weeks, chill one bottle for 48 hours and give it a taste. If it’s carbonated and tasty, refrigerate the rest and enjoy!

    Brewmaster’s Tip: Conditioning

    Your beer is ready after 2 weeks of carbonation — but letting it sit for a few extra weeks can make a big difference.

    This extra time is called bottle conditioning, and it allows the flavors to mellow and the beer to smooth out. Not required, but worth the wait.
