Summit is a very high alpha hop predominantly used for bittering, but it can also be used for bright, citrus aromas and flavors if used late in the boil. With notes of tangerine, orange, and grapefruit, these hops are great for American pale ales and IPAs.
A common commercial example of this hop in use is by Fifty Fifty Brewing in their Rockslide IPA.

These hops are added at the beginning of the boil. Typically, this is a 60 minute boil, but since our kits already have bittering hops added, any supplemental bittering hops will be boiled for no longer than 20 minutes.
The higher the alpha acid % and the longer the hops are boiled, the more bitterness the hops will impart. When boiling hops with our kits, it is highly recommended that you add a Liquid or Dry Malt Extract Softpack to the boil, or the hops won’t leave behind any bitterness. Do NOT boil the Brewing Extract.
