    Overall a decent batch

My wife tried & loved one of a miedium sized craft brew Apricot Wheat so I figured I'd give this a try. The only substitute I made was to get some apricot puree from a can; ready to add so I didn't have to puree them myself. Maybe next time I will as this batch had a subtle metallic taste - which I think came from the can of puree. The wife didnt seem to really notice it but i found it distracting.Overall it was an easy reciepe & my wife is very much enjoying it. I'm not a big fan myself but if he's happy then I'm happy. She asked me to make it again so I likely will. This time however I'll try some of the Safale US-05 Dry Ale Yeast (the packets under the can lids seem to be a little older...) and will get the apricots and puree them on my own rather than using the canned puree.

Add Citra hops for a great beer

I was inspired by the Ithaca Brewing Company's Aprocot Wheat by I wanted my own take on it. Instead of cardamom I add 0.5 oz of Citra hops to the primary fermentation (10 days) and my apricot puree to a second fermentation (10 days). Shortly before bottling I supplement it with 1.5 oz (3 tbsp) of Brewer's Best natural apricot extract to bring out that apricot aroma. I follow the recommended carbonation and conditioning times. The end result is a terrific beer that get rave reviews from my friends and family. The fruity apricot notes are there and the Citra hops is a perfect compliment.

    Comparable to Craft Brews!

This is my second ever home brew I have made. Ironically the first brew I made was the Bavarian Weiss which is what this Apricot Wheat ships with along with additional ingredients. I felt my first brew (the Bavarian Weiss) was ok. When I found out the same Weiss container was shipped with this recipe I wasn't too delighted; however all the other ingredients really do make a difference. That is you add your own apricots. I went and got the best looking organic apricots I could find. I followed the directions as precisely as I could and was very particular about being clean. I've even had the patience to wait for each of the stages adding an extra week onto each stage for good measure. When I tried my first bottle after waiting for the entire process I was impressed with the difference compared to my first brew. This actually tastes like a real craft beer. Great aromas coming from the pour small but pleasant head and a great taste. There were a few things I would hope to improve on:There was a ridiculous amount of sediment in about half of my bottles. One of them looks like it is 50% sediment. I'm familiar with unfiltered beers but this is like mouthfuls of sediment. I easily got around this issue by either pouring very slowly or using a very very fine strainer. The other thing is that there is somewhat of a slightly sour taste (not like a spoiled beer taste) that I have noticed seems to be decreasing as time progresses so maybe even though I added an extra week…
