Everything you need to craft your perfect brew

STORY

Overview: Breakfast Pig Porter is a bold breakfast-inspired porter brewed with American Porter Brewing Extract, Smooth LME, Golden LME, Pale LME, lactose, Crystal 60, Chocolate Malt, Honey Malt, cocoa powder, cracked coffee beans, maple syrup, bacon, and S-04 yeast. It delivers rich malt flavor, cocoa depth, roasted coffee character, maple sweetness, subtle bacon flavor, creamy body, and a 6.41% finish.

PROFILE

Tasting Notes: Expect a malty porter with roasted coffee aroma, cocoa flavor, maple sweetness, creamy lactose body, and a savory touch of bacon. The finished beer is rich, smooth, breakfast-like, and layered without losing its porter backbone.

IMPORTANT BREWING NOTE

Contains Lactose: This recipe includes lactose, a milk-derived sugar used to add sweetness, body, and a creamy mouthfeel. In a finished 2-gallon batch, that equals about 0.25 oz, or 7 g, per 16 oz pint.

Bacon Addition Note: The bacon is cooked, blotted well, torn into pieces, soaked overnight in a small amount of distilled alcohol, then added to the fermenter on day 10 in a sanitized sack with cracked coffee beans. The remaining bacon liquor and maple syrup are added at the same time.

Bacon Removal Note: If fermentation takes longer than expected, the source instructions advise removing the sack containing the bacon with sanitized tongs before extending fermentation.

    Bold Robust Flavor

Waited several weeks before reviewing this beer to see how it would progress after conditioning for awhile. After the 2 weeks the taste of coffee overpowered but eventually mellowed out to allow the maple and bacon flavor to give a bit of sweetness and in my opinion more enjoyable. Definitely a beer with big flavor.

    Breakfast Pig Porter

I did like this but the coffee was strong (not that I didn't like) and I didn't get any maple/bacon flavor. I do like it sweet- I took half at 14 day carb and left the rest in longer. Next time I would use less coffee and bacon with more flavor. Still a very good beer- I was hoping to get the flavors from bacon/maple along with coffee.
