STORY:

While we often focus our efforts on bold and popular craft beer recipes here at Mr. Beer, we’re not so terribly highbrow. We can all admit to consuming some Old English, Colt 45, Steel Reserve or Mickey’s at a backyard kickback at one time or another. So we thought we’d craft our own malt liquor recipe for homebrewers who want something strong and malty to drink. Since we all recognize that 40 oz. malt liquor bottles are handed to you in a brown bag, we thought we’d name this one the Brown Bag Special.

PROFILE:

A result of a Mr. Beer experiment, this clear, golden-colored beer was intended to be a close representation of the classic “malt liquor” style, but it ended up drinking like a top shelf craft beer. The liberal addition of corn adjuncts gives this beer a malty grain aroma and sweetness that is slightly balanced by the addition of Nugget hops. While this beer is easy to drink, a slight warming from the alcohol will remind you to please drink it in moderation because this isn’t your average lager.

Tasty Beer Take Time to Carbonate

Brown Bag Special was my 7th Mr. Beer recipe and my 5th partial mash.Instructions were clear pretty much the same as other partial mash recipes but with 2 cans of extract lots of booster and some flaked corn in addition to the malt. The other main difference (to my experience) was the lager yeast. Lager has to ferment at a lower temp so it's important to have good temp control of your fermenter for a recipe of this nature. I have a mini-fridge with an Inkbird temp controller and a heating mat works well for maintaining proper temps and the fridge fits 2 LBKs...Anyway it took a bit longer for this beer to get fully carbonated as compared to my previous batches. Not sure if that is an effect of the lager yeast? For whatever reason instead of the usual 4 weeks for carb/conditioning time it was more like 6 weeks before it lost the sweetness and fully carbonated. And honestly I think it will improve even more with a few more weeks. Just an FYI you may need to be a little more patient while the yeast does it's thing with this beer! Now that it's finished the taste is very good! It actually does remind me of the Malt Liquors of the *old days*! Really crisp and clean to drink and the corn adds a bit of sweetness to the malt and the hops add a slight aroma and finish. It doesn't have a LOT of character but it's an easy drinker...and it was fun to brew. One other thing: I believe the recipes indicated it will ferment up to 8% ABV but mine topped out at 6.8%.It does have some…
