Overview: Cherry Bonbon Dessert Stout is a rich dessert stout brewed with St. Patrick’s Irish Stout extract, Smooth LME, Robust LME, lactose, Crystal 40, Carapils, Chocolate Malt, cacao nibs, S-33 yeast, dark sweet cherries, vanilla, and cognac or cherry brandy. It delivers chocolate cherry flavor, smooth malt depth, creamy body, and a sweet stout finish.

Tasting Notes: Expect a full-bodied stout with roasted malt flavor, chocolate depth, sweet cherry character, smooth vanilla, light warmth from cognac or cherry brandy, and a creamy lactose body. It is rich, dessert-like, and built for slow sipping.

Fruit Addition Note: Dark sweet cherries, vanilla extract, and cognac or cherry brandy are pureed together and added on day 7 of fermentation.

Cold Crash Note: This recipe benefits from a 24-hour cold crash before bottling to help settle fruit solids, cacao nib particles, and yeast.

Conditioning Note: Dessert stouts, lactose recipes, cacao additions, fruit additions, and higher-gravity beers usually improve with additional conditioning.

    Wonderful Stout

    Don’t let the bon bon title fool you. It’s not syrupy sweet. It has just the right amount of chocolate and cherry that you have to discern the flavors. In other words it doesn’t hit you in the face. Probably one of the best stouts I’ve ever had. I’ll have a hard time keeping this one in stock as my friends love it. Highly highly recommend. I renamed it Chocolate Cherry Stout. I was never very creative.

    A great stout. Even IPA lovers like it.

    One of the best beers I have yet brewed. For those who love dark beers you're gonna love this one. Even my IPA-loving friend said that this one was a great beer - he even had two!
