This American-style stout is an homage to Crater Lake National Forest in Oregon. Dark and rich, this stout is almost as deep as Crater Lake itself, which is the deepest lake in the United States. Bold roasted coffee and chocolate notes are balanced by the earthy and spicy notes of a Mt. Hood hop addition. A small amount of wheat in the Golden LME provided a thick, lasting head and silky mouthfeel.

    waiting to taste

    I have it all bottled right now and gave up drinking for a month or so.... so on 20 April 2025 will taste it. Smells good and followed the provided instructions so all should be good.

    Just finished bottling

    I just finished bottling my Crater stout batch and it seems to have come out okay. I look forward to tasting it in a couple of weeks after bottle conditioning. I'm pretty sure it'll taste great.

    Reward your patience with a fabulous stout!

    Winters where I live are cold wet grey and dreary. I wanted to make a winter brew for sipping by the fire that was dark and complex in flavor without being spicy or too sweet. This one sounded just right and definitely was...after some time. I knew I would have to condition this one longer in my 55-degree garage but I couldn't wait longer than 3 weeks before trying one. It was good but had an unusual sweetness up-front. I enjoyed a few more too early and regret it because after another week or so the beer was so much better and the off-flavor was gone. If you give it time this is an awesome brew! The head was a little lacking but the flavor is rich good mouth-feel with coffee notes and a nice bitterness on the end. I've tried a few winter brews from the grocery store and this ranks up there as my favorite! I'll be making more of this delicious brew next winter!
