    Excellent Brew.

    First the bad the kit was supposed to include two packets of BrewMax LME Smooth but it only had one. Unfortunately I didn't open the kit for about two months due to by work schedule. It was brew day and a little late at that point. I substituted an equal weight of corn sugar. For the beer. I wanted a Peppermint forward stout for my wife and I knew that one teaspoon in 5 gal wasn't going to do that so I used one tablespoon. Then I also changed the vanilla to two tablespoons vise teaspoons to offset. What a got was a nice rich stout with distinct Peppermint flavor but not at all overpowering with hints of chocolate and vanilla. Aside from the three alterations I mention here I followed the recipe exactly and kegged it on day 24. I carbonated it for one week and the beer is wonderful. My wife already asked that I make it again next winter but before Christmas this time as had been my original plan before earning a living got in the way :-)
