Overview: Saint Augustine of Hippo Doppelbock is a rich, malty true lager inspired by Weihenstephaner Korbinian. Brewed with Golden Ale Brewing Extract, Smooth LME, Pale LME, Munich Malt, Chocolate Malt, Crystal 60, and W-34/70 lager yeast, it delivers deep malt character, smooth balance, subtle chocolate notes, and a strong 7.57% finish.

Tasting Notes: Expect a malt-forward doppelbock with rich bread crust, toasted malt, caramel-like sweetness, light chocolate depth, balanced bitterness, and a smooth lager finish. It is strong, balanced, and surprisingly easy to drink for its ABV.

IMPORTANT BREWING NOTE

True Lager Note: This recipe uses W-34/70 lager yeast and must be fermented cold at 53–59°F for best results.

Temperature Control Note: Make sure you have a way to maintain lager fermentation temperatures before brewing this recipe. Warmer fermentation may produce a less clean finished beer.

Strong Lager Note: This is a higher-ABV lager. Additional conditioning can help the malt richness, alcohol warmth, and lager character become smoother and more balanced.

    Favorite Beer from Mr Beer

    One of my favorite beers is Paulaner Salvator and this stands up great against it. I fermented at 55f for 21 days, did a diacetyl rest at 62f (my basement temp) for 3 days then cold crashed the fermenter in my fridge for 4 days then bottled. After carbonation was complete I tried a beer after 3 weeks in the fridge and it was good but a little raw. It was great at 6 weeks and I'll see at 8 weeks if it improves more. If I had the capacity, which I don't due to cooling space, I'd make the 5 gallon version. Outstanding recipe and beer.

    This Bock is the G.O.A.T.

    I love the variety of beers Mr. Beer offers and this is a great cold season lager. This style of beer has an interesting history and was easy to make with outstanding results. My garage got a little colder than ideal during fermentation and my ABV was slightly lower but the end product was very enjoyable. Great clarity color mouth-feel flavor. Would make again!

    Outstanding Doppelbock!

    This turned recipe turned out fantastic. Following the instructions is the key. After cold fermenting at approximately 54-58* I had bottled it and conditioned for 8 weeks before tasting. The first taste was an explosion of flavors from chocolate to bread to dried fruit from a fruitcake. I will be making this again this fall/winter!

    This beer is really smooth and great tasting. Brewing wasn't too difficult other than watching the water temperature. Planning on purchasing again.

    Amazing Clone

    This beer is outstanding! Weihenstephaner Korbinian has always been a favorite and this one is VERY close. I was able to ferment on the back porch for an extended period of weather in the 50s. I sampled on day 21 and it was good but had some sweetness. I tried at day 24 and sweetness was still there but had subsided a bit. I remembered that Korbinian has sweet notes itself. I just tried my first carbonated bottle after two weeks and am amazed at how close it is to the original. This is a dark robust malty easy-drinking beer. I really like it. One of Mr. Beer’s best!
