Overview: Secundus the Silent IPA is a bold double IPA brewed with Coopers Light UME, Booster, Carapils, Crystal 40, Columbus hops, Simcoe hops, Centennial hops, and US-05 yeast. It delivers massive bitterness, layered hop aroma, firm malt support, and a strong 6.94% finish.

Tasting Notes: Expect a hop-heavy double IPA with assertive bitterness, resinous Columbus character, citrus and pine notes from Simcoe, bright Centennial hop flavor, and a subtle malt backbone from Carapils and Crystal 40.

IMPORTANT BREWING NOTE

Hop Schedule Note: This recipe uses a 90-minute boil, multiple staged hop additions, and two dry-hop additions during fermentation. Keep the hop sacks organized and label them if needed before brewing.

High Bitterness Note: This recipe comes in at 121 IBUs and is built for fans of very bitter, hop-forward IPAs.

    Looking forward to this one!

    Have not yet tasted the final product but the little bit left over from bottling I did taste gives me high hopes!

    A lot of work & xtra week of fermentation BUT worth it !!. Rich hoppy taste & mellow aftertaste

    Same consistent result: ABV Lower than Specified

    Looking back at the review I'd submitted for this recipe kit a year ago (2022) it appears so far that my batch (3rd try) is giving me mostly the same results. Two elements of my evaluation: (a) Rich varied flavors ending with a big bitterness bite. The original Pliny seems still not available here in the east; I'd really like to try it as a comparison sometime.Part (b) however is the same weakness that I'd indicated in my previous review: The ABV alcohol % again seems to fall well short of the specifications. (And another reviewer noted the same issue.) Measured final gravities were fairly consistent for my 3 batches being in the range of 1.019 to 1.022 still well above the specified 1.011. And so the ABV measured out in the range of 5% to 5.5% well short of the specified 6.94%. I'd previously written a question to the Mr. Beer staff and someone responded that they'd definitely look into this but that was a year ago and I haven't seen any substantive response.

    ABV Again Falls Short

    I don't want to knock this recipe overall because it does indeed have some truly rich & varied flavors along with a big bitterness bite. The original Pliny is apparently not available here in the eastern U.S. so I haven't been able to compare them.The however however is that the ABV fell short of the defined specifications in both my attempts. I noted a previous reviewer indicated the same thing. The original gravities of both my batches were quite close to the specs but final gravities ended up too high both times which may indicate incomplete fermentation according to the recipe design. The final gravity for this latest batch ended up at 1.019 vs. the specified 1.011. Therefore the indicated ABV of 5.5% was well short of the recipe's stated 6.94%.The previous reviewer suggested a possibly yeast weakness for such a big beer which makes sense though my yeast expertise is limited. Perhaps our friends at Mr. Beer can take a closer look at this.

    Very Hoppy IPA

    I tried this recipe not sure how I would like an IPA as hoppy as this one. But it turned out great. The hoppiness can be overwhelming if you aren't into the really bitter IPAs but if you are it is a great one. The color on mine like most of my Mr. Beer brews is a bit darker than expected but the taste is great and it was a lot of fun to brew.
