STORY

Overview: Shack on A Hilltop Strong Ale is a smooth winter warmer brewed with Bewitched Amber Ale Brewing Extract, Smooth LME, Golden LME, Crystal 40, Saaz hops, S-05 ale yeast, and vanilla extract. It delivers rich malt flavor, gentle hop balance, smooth vanilla depth, and a strong 7.6% finish.

Tasting Notes: Expect a strong, malt-forward ale with smooth body, caramel-like malt depth, gentle Saaz hop bitterness, subtle herbal hop character, and a soft vanilla finish. It is warming, balanced, and built for cold-weather drinking.

IMPORTANT BREWING NOTE

Vanilla Addition Note: The vanilla extract is added 48 hours before bottling. This helps preserve smooth vanilla aroma and flavor without driving it off during fermentation.

Hop Note: Both Saaz hop packets are boiled for 20 minutes and the hop sack stays in the fermenter during fermentation.

Strong Beer Note: This is a higher-ABV strong ale. Additional conditioning can help the malt, vanilla, hop balance, and alcohol warmth smooth into the finished beer.

    Great Taste with a Great Finish

    I was looking for a good winter ale similar to Jubelale from Deschutes. When I saw this recipe it looked great except it sounded like it may be even better with a bit more of a hoppy finish. I followed the recipe but added in a packet of Cascade hops in with the Saaz hops and then added an additional packet of Fuggle hops at the end of the boil. It came out fantastic. I love the full bodied taste the vanilla overtones and the hoppy finish.

    Good ale

    Very distict flavor can taste the vanilla and smoth finish. I got an 8.5 % alcohol with this recipe. Doesn't have the hop finish like a Jubelale but still a good brew.
