STORY

Overview: Sunshine and Mango Sour is a bright, tart mango beer brewed with Golden Ale Brewing Extract, Golden LME, Honey Malt, lactose sugar, lactic acid, Jumex Mango Nectar, and S-04 yeast. It delivers soft malt sweetness, juicy mango flavor, creamy body, refreshing tartness, and a 5.51% finish.

PROFILE

Tasting Notes: Expect a lightly sweet and tart mango beer with golden malt flavor, honey-like malt sweetness, smooth lactose body, juicy mango character, and a clean lactic acid finish. It is fruity, refreshing, and built for warm-weather drinking.

IMPORTANT BREWING NOTE

Contains Lactose: This recipe includes lactose, a milk-derived sugar used to add sweetness, body, and a creamy mouthfeel. In a finished 2-gallon batch, that equals about 0.25 oz, or 7 g, per 16 oz pint.

Mango Addition Note: The room-temperature can of Jumex Mango Nectar is added directly to the fermenter on day 7. Carefully pour it in, replace the lid, and let fermentation continue.

Lactic Acid Note: The bottle of lactic acid is added to the fermenter right before bottling. This gives the beer its tart sour-style finish.

Yeast Note: Use the included S-04 yeast for this recipe. Do not use the yeast packet from under the Brewing Extract lid.

    There's a bonus in this beer

    At the request of my son's girl friend I thought I would give this recipe a try and give it as a gift to the girls in the family. I even packaged it in a kombucha bottle used my daughters art on the label and made light of the name. There is a crisp light citrus tongue tingling sensation at start and a white bread and ale finish. I added muddled fresh mango to the second pint which activated the head and nose. Fruit forward yes but balancing the sour. The rest stayed constant smooth and refreshing. This recipe has latitude for adding fruit. It starts like a sour and finishes more like an Ale not girly. Bonus: The trub from this recipe make EXCELLENT bread; perfect taste texture and crust. Nothing is wasted!

    nice brew

    color from mine doesn't look like the pic as shown. it's still a little bitter even when i added the recommended amount of sugar v. carbonated drops. I'm going to let rest of the bottle condition another week or so.
