Cacao nibs (crushed seeds from the Cacao plant) are the key ingredient in chocolate. They will add a wonderful rich, earthy, and roasted chocolate character to your beer. You can add 1-4 oz of nibs (per 2 gallon batch) to the end of the boil for chocolate flavor and aroma, or you can add them after the 1st week of fermentation for a more muted flavor and aroma. Use both methods for maximum effect.

Good taste and priceChocolate can be difficult flavor to obtain in beer, I've tried baker's chocolate and cocoa powder, but the nibs seem to hit the mark. They are easy, subtle flavoring and you don't have to worry about losing head retention (see any chocolate bars with fat content) or chalky mouthfeel (see cocoa powder). For me this was an easy addition and it got the job done.

Easier to useI used these in a recipe that called for chocolate as these were easier to use and obtain than going to a store. An additional upside is that if I have chocolate in the house, it will "disappear," leaving me empty handed when I go to brew. Never happens to these cocoa nibs.

Good Brew!PA Chocolate Porter has become one of my favorite brews. A little time consuming to brew, but worth the time. Everybody loved it! Even my finicky cuz Mel...she took a six pack home with her, lol. Just remember, like with all of these brews, I've found that 17 days in the fermenter, and about 8 weeks carb & conditioning seems to be the sweet spot.
