STEP 1: SANITIZING

Follow the steps outlined in your Mr. Beer Kit Instructions. (You can find a copy of these instructions to download by visiting our help desk.

NOTE: BE SURE TO SANITIZE EVERYTHING THAT WILL COME INTO CONTACT WITH YOUR BEER. 

STEP 2: BREWING

Brewing beer is the process of combining a starch source (in this case, a malt brewing extract) with yeast. Once combined, the yeast eats the sugars in the malt, producing alcohol and carbon dioxide (CO2). This process is called fermentation. 

    1. Remove the yeast packet from under the lid of the can of Brewing Extract, then place the unopened can and LME softpack in hot tap water.
    2. Using the sanitized measuring cup, pour 4 cups of water into your clean 3-quart or larger pot.
    3. Bring mixture to a boil, then remove from heat. Open the can of Brewing Extract and the LME, and pour contents into the hot mixture. Stir until thoroughly mixed. This mixture of unfermented beer is called wort.
    4. Fill keg with cold tap water to the 4-quart mark on the back.
    5. Pour the wort into the keg, and then bring the volume of the keg to the 8.5-quart mark by adding more cold water. Stir vigorously with the spoon or whisk.
    6. Sprinkle the yeast packet into the keg, and screw on the lid. Do not stir.
    7. Put your keg in a location with a consistent temperature between 68° and 76° F (20°-25° C) and out of direct sunlight. e Ferment for 14 days.
    8. After approximately 24 hours, you will be able to see the fermentation process happening by shining a flashlight into the keg. You'll see the yeast in action in the wort. The liquid will be opaque and milky, you will see bubbles rising in the liquid, and there will be bubbles on the surface.
    9. After 1 week of fermentation, puree the can of fruit with a sanitized blender and quickly open the lid and add the fruit to the keg. Do not leave the keg lid open for too long. Close the lid and continue fermentation.

Your fermentation will usually reach its peak in 2 to 5 days (this is also known as “high krausen”). You may see a layer of foam on top of the wort, and sediment will accumulate at the bottom of the fermenter. This is totally normal. Complete fermentation will take approximately 2 weeks. 

After high krausen the foam and activity will subside and your batch will appear to be dormant. Your beer is still fermenting. The yeast is still at work slowly finishing the fermentation process.

Rated 1 out of 5 by Brewer by the Lake from A disappointment This was the second Mr. Beer recipe I brewed. (The first came out great.) I followed the recipe exactly and thoroughly sanitized everything. Let it ferment for three weeks, condition for a month and then tried it. Unfortunately, the beer has an unpleasant cider-like aftertaste. Slightly sour... like beer mixed with cherry cider. The recipe instructs you to add the cherries at the beginning, however I read elsewhere that you should wait to add the cherries about a week into fermentation... this may help avoid the cider taste. I have about 15 bottles that have been conditioning for over six months. I'm not ready to dump them. Hopefully the cider effect has mellowed with the long conditioning.

Rated 3 out of 5 by Mt50 from Used Real Fresh Michigan Tart Cherries While not a fan of either weissbier or fruit-flavored beers, I bought 2 qts. Of fresh tart Michigan cherries on a trip there just to try them in this recipe. I pitted, cleaned, puréed, double strained them and froze them for10 days. I then made per the recipe. It came out good. The cherries leave a slight aroma of the fruit but not so much the taste. They do add a good tartness. If you like wheat beer you will probably like this, and I do like it, considering it's a wheat beer. I like that the cherries don't make it taste sweet or fruity. One caution, you need to strain better than I did, the bottom of the keg had some cherry pulp.

Rated 4 out of 5 by Irish Brewer from I will make this one again and again I used the old recipe for the Cherry Wheat but I decided not to use Cherries. I switched to Blueberries and made a Blueberry Wheat. I normally wait at least 2 weeks of lagering before tasting what I made. On this one I was really anxious and needed to try one. The lagering time was a little over 30 hours and it was good. The rest of the batch will get the full 2 weeks and they should be even better. This brew with the smell and taste reminded of my Grandmother's Blueberry Pie. I think I just found a name for this brew.

Rated 2 out of 5 by 802 Brews from Agree with RickBeer from A2 I've brewed six Mr. Beer recipes. All have been great until this one. I tend to wonder with an earier reviewer if the adjunct ratio is off. I wonder how using half the can of cherries would taste? This was particularly disappointing batch because I am a fan of Cherry Wheat beers, and I was looking forward to popping my first bottle. I did condition the recommended time, but I'm going to hold off before opening the next bottle for several weeks to see what happens.

However, I had an extra can of Bavarian Weissbier, so I ordered the cherries and UME from Mr.Beer and, I can assure you, I made the recipe true to form. It's...drinkable, and not really offensive, but definitely nothing special. The cherry taste is almost completely lost; all the cherries seem to offer is some sourness.

Rated 3 out of 5 by Nads from Not bad for what it is I'm not sure why the guys tasted so horrible perhaps he didn't santize properly. Mine turned out really pretty good. After reading online make sure you age it the full 2 weeks, and the longer you let it condition, the better color and flavor you'll end up with. Really not that bad of a beer that everyone would drink. It's a hint on the sweet side but not overpowering.

Rated 4 out of 5 by emtjeff43 from Great taste on a summer day! I've always been a fan of cherry wheat beer, so when I saw this I had to order it! This is my second home brew. My first was ok but, not quite what I wanted. And when I read some of the other reviews I was skeptical. But I followed the directions and stuck to the fermentation and conditioning temperatures religiously. I conditioned for 3 weeks but,wasn't satisfied. I waited another week and a half and was reward with a great beer for the fourth of July holiday!
