Brewing beer is the process of combining a starch source (in this case, a malt brewing extract) with yeast. Once combined, the yeast eats the sugars in the malt, producing alcohol and carbon dioxide (CO2). This process is called fermentation.

  1. Remove the yeast packet from under the lid of the can of Brewing Extract, then place the unopened can in hot tap water.
  2. Using the measuring cup, pour 4 cups of water into your clean 3-quart or larger pot. Bring water to a boil, and then remove from heat. Open the can of Brewing Extract and pour it into the hot water. Stir until thoroughly mixed. This mixture of unfermented beer is called wort.
  3. Fill keg with cold tap water to the #1 (4-quart) mark on the back.
  4. Pour the wort into the keg, and then bring the volume of the keg to the #2 (8.5-quart) mark by adding more cold water. Stir vigorously with the spoon or whisk.
  5. Sprinkle the yeast packet into the keg, and screw on the lid. Do not stir.
  6. Put your keg in a location with a consistent temperature between 65° and 75° F (18.3°-23.8° C) and out of direct sunlight. After approximately 24 hours, you will be able to see the fermentation process happening by shining a flashlight into the keg. You'll see the yeast in action in the wort. The liquid will be opaque and milky, you will see bubbles rising in the liquid, and there will be bubbles on the surface.
  7. You’ll ferment for 21 days total. Your fermentation will usually reach its peak in 2 to 5 days (this is also known as “high krausen”). You may see a layer of foam on top of the wort, and sediment will accumulate at the bottom of the fermenter. This is totally normal. Complete fermentation will take approximately 2 weeks. After high krausen the foam and activity will subside and your batch will appear to be dormant. Your beer is still fermenting. The yeast is still at work slowly finishing the fermentation process.

Rated 5 out of 5 by from Great Dark Ale I used this as a base for an Oktoberfest Dark Ale, and it worked like a charm. I made a double batch in a 6.7 Gallon plastic barrel. I used 2 refill cans, 2 packs of Golden LME, 2 oz of Hallertau Hops, American Oak chips, and added 2 cups of raw wild flower honey after 5 days. Fermented another 2 weeks, total fermentation time of 3 weeks. 2 weeks to get the targeted 2.5 C02 in bottles with cane sugar.It tastes like a hoppy dark ale aged in an oak barrel for a year. Best beer I ever made. Period!

Rated 5 out of 5 by from Great Dark Ale Made this as is. Fermented 19 days. I’ve found most of the Mr. Beer darker beers taste fine to me after two weeks, so I tried one then and it was great. I did want to see how longer conditioning would be. It has now been two months and I think it is really worth the wait. Lots more balanced, mellower flavor, less like a stout and more like a very flavorful amber. The heavier Maltiness is still there, but tamer. This is good.

Brewed correctly, it has perfect head, body, and flavor. It is slightly bitter with subtle, yet very pleasing, notes of coffee and chocolate on the back end. Yum.

Rated 5 out of 5 by from Excellent Beer I added 16oz of corn sugar to boiling water before adding the wert to up the ABV. Fermited for 2 weeks then dry hopped 1 oz of Hallertau Hops for 3 days and burbon soaked American Oak chips for 5 days. Removed and let sit an additional two day (for a total of 3 weeks fermintation). Bottled with carbonation drops and let carbonate and condition for 3 to 4 weeks. This is by far the best beer!. This one came out to 7% ABV.

Rated 5 out of 5 by from Happy Accident - 14 months laagered and FANTASTIC I have brewed Winter Dark many times and it is always good; however, I recently discovered a 1-liter bottle of Winter Dark that I had bottled 14 months before and had missed. The taste was AMAZING. My wife hates beer and even she thought it was delicious. She now tries everything I brew.
